Save The Bananas! Quick Banana Bread With Yogurt And Honey

You know it’s going to happen. It’s inevitable. You bought a bunch of bananas at the grocery store and before you know it, they have black spots all over and are turning into an unappetizing, mealy mess. But before you throw them out think again. This super easy, healthy banana bread can be made in 8 minutes and uses items you probably already have in your kitchen, including those way-too-ripe bananas.

In this healthy recipe, you use honey instead of sugar and Greek yogurt to cut the butter down. The result: the best banana bread ever with a deep rich flavor. There is no possible way you can tell sugar has been substituted. Honey contains vitamins, minerals and amino acids. It is easily digested by the body, is an excellent source antibacterial and antifungal properties and supports bees.  Raw honey is best. The Greek yogurt not only makes the bread very moist, but also is a great substitute for fat such as butter. The benefits of yogurt are probiotics, which create good bacteria for the stomach. Honey is knows to boosts immune system, and contains proteins, calcium and vitamins.

Banana Bread

Directions:

Pre heat oven to 350 degrees.

Combine flour, baking soda, baking powder and salt in a large bowl.  In a separate bowl, combine the rest of the ingredients except for the walnuts: butter, Greek yogurt, honey, bananas, eggs and vanilla. Set aside walnuts. Beat the wet ingredients thoroughly. Pour wet ingredients into flour mixture. Beat again.

Fold in walnuts.

Pour batter into greased and floured loaf pan.

Bake for 60minutes at 350 degrees.

This is great bread for the whole family. Serve it to your kids as a snack or as a dessert with berries. It’s a great breakfast on the go when rushing to work or adding sweet surprise to a packed lunch.
